The problem with PDF content

That's the crazy thing that so many content designers just do not understand. They continue to put all of their efforts into designing pretty PDF content but at the end of the day it is totally inaccessible to blind and visually impaired persons. Why you ask? Very simple. PDF content is made up of an image that cannot be deciphered by screen readers. In other words; PDF files are image-based instead of textual-based. Blind and visually impaired persons use screen readers to surf the Internet.
More and more online forms are being designed in PDF format and as a result of this blind and visually impaired persons are being deprived of their right to privacy and confidentiality. How is this? Simple! If a form is in PDF format it means that blind and visually impaired persons need to depend on sighted assistance to help them complete it. It is frustrating, scary, and a downright violation of our right to confidentiality and privacy. There is a way for all of this to be dealt with and it starts with the content developer using the appropriate tags to format the PDF content so that it is made accessible and usable.
What most content developers still fail to understand is this: if they take the additional time to tag their PDF content appropriately, they will not only be making it accessible to blind and visually impaired persons; they will also be making it accessible and usable to the print disabled, the technically shy, and to those who are not technically savvy. Before you start to wonder who all of these people are, please allow me to elaborate.
The print disabled - those who are unable to read because of either physical, mental, or visual challenges.
The technically shy or not technically savvy - those who have difficulty coping with modern technology and who work better with more simple environments. In short, the millions of aging baby boomers who did not grow up with the Internet at their fingertips.
I personally find PDF content to be frustrating, a useless and time-consuming obstacle for me to deal with, and a downright insult to my right to privacy and confidentiality. I am going to give you an URL that you can visit in order to learn why PDF content does not benefit the blind and visually impaired.

Greetings everyone! I'm Jayna Sheffield your friendly Café friend and it's time for me to introduce you to our editor of the week. Our dear friend Donna J. Jodhan. Donna is an accomplished writer, blogger, and editorialist. She is a dynamic advocate and someone that so many are clamoring to meet!
Here now is Donna's editorial of the week.

Then and now
I am not really sure why Easter time affects me like this but I usually call it my time for remembering and thanking. This is the time of year when I go back in time and remember what I had and than thank God for what I have. What am I referring to? Up until five years ago I had enough vision to do so much on my own but a wicked turn of events conspired against me and in the matter of just a few months it was all taken away from me. Today I sit here with precious little sight but I am extremely grateful that I still have enough to see the light of day.
My life has changed drastically over the past six years and I have had to make so many adjustments in order to remain independent but that's okay. What keeps me going are those wonderful memories that I captured while my vision was good enough. I consider myself to be extremely lucky because there are not many persons who can obtain new vision after being born with precious little. That's me and I am going to share some of my precious moments with you.
In my hay day as I like to refer to it, I was able to read and write with the aid of special magnifying glasses. I used to play air hockey, ice skate on my own, jog along the sidewalk, and enjoy the wonders of nature. I was able to watch the sun come up over tall buildings and set below the line of the horizon. I could see the trees bending and bowing, the flowers swaying gently in the wind, and squirrels scrambling over snow banks. I could watch my favorite hockey team on TV flying up the ice in their red jerseys. I was able to see the blue skies with puffy white clouds chasing each other. I could see the fat white snowflakes falling gently to the ground, the thick green grass, and kids playing innocently in the park. I was able to admire the gorgeous orange plumage of my beloved Scottie Bird, my canary and see the faces of my family.
One of my favorite memories is that of the silver Air Canada Jet floating lazily over a jade green Caribbean sea with the sun streaming down from above. Another is that of a beach with white capped breakers rolling gently towards golden sand and pleasure boats laden with merrymakers. Yes, those were good times and how much I miss them but it's not the end of the world. I can go on for pages but I think that by now you are getting the picture. My world today is very different.
Now I have to depend on my senses of smell and touch to help me along. I use my memories to help me picture such things as layouts of stores and restaurants. I use my memory to picture what others may look like. I can find my way around familiar territory based on my memory of what it looks like. I may not be able to play air hockey anymore but I have taken up chess as a substitute. I still ice skate but now I have to depend on someone else to guide me. I still enjoy movies but now I have to listen more attentively to what's going on. I use my sense of smell and touch to tell me if food is either going bad or if a fruit is rotting. Before now I was able to use my sight to do this.
You see, my world has changed but I am still here and alive and well to tell the story. My message to you is this: There is always a silver lining in those thick dark clouds. If something is taken way from you, then it is always possible to find a substitute. Be thankful for what you had and what you have.

Fry Pan Method For Reheating Pizza
Take a regular fry pan and warm it on your stove hotplate. When hot place the pizza in the pan and use a medium heat to warm the slices to perfection.
Do not cover with a lid while warming or you will lose the crispness of the base.

Enjoy A Variety Of Food
If you eat a variety of food, you will take in a variety of vitamins and minerals that help prevent infections and illness.
Be Active
Being active keeps our bodies strong, helps control our weight and makes us feel great! Being overweight can increase our chances of developing some diseases like cancer, diabetes, hypertension and heart disease.
You don't always have to go to a gym, walking, taking the stairs everyday, swimming, cycling and any fun sports will help you to stay active.
Make starchy food the basis of most meals
Starchy foods provide us with energy during the day, so include them in most meals.
Try to eat food that has more roughage to keep your digestive system healthy, such as:
• Brown rice
• Wholewheat pasta
• Potatoes with skin on
• Sweet potatoes
• Mealies and samp
• Porridge such as oats and Maltabella
• Cereals such as bran flakes and muesli
Eat plenty of vegetables and fruit everyday
Vegetables and fruit are important to eat as they provide many different vitamins and minerals, as well as roughage.
Try to eat five different vegetables and fruits everyday:
• Eat fruit with breakfast, e.g. a banana with cereal or a glass of fruit juice with your toast.
• Snack on fruit between meals, e.g. apples, pears, grapes, naartjies and bananas are easy to eat at work. Try to include other different fruits such as berries, plums, nectarines, pineapple, kiwi fruit, etc.
• Keep dried fruit, e.g. raisins and dried peaches, on hand for a tasty snack
• Include salad with lunch or on a roll, e.g. slices of tomato and lettuce, carrot sticks, celery sticks
• Try to include two vegetables of different colours with dinner, e.g. green beans and carrots, spinach and butternut, peas and corn, broccoli and cauliflower. Stir-fry assorted vegetables such as cabbage, red and yellow peppers, baby marrow and mushrooms.
Eat dried beans, peas, lentils, peanuts and soy regularly
These are high in roughage and contain protein, which keeps muscles strong.
Tips on including these foods are:
• Add lentils or kidney beans to lean mince or stew
• Have baked beans on toast for an easy breakfast or lunch
• Try a 3-bean salad with your meal
• Try lentils or beans with vegetables as a stew
• Have soya mince with spaghetti or brown rice, or soy burgers
• You can also buy soya yoghurt and milk
Try to include these in your diet instead of always eating animal proteins.
Chicken, fish, milk, meat or eggs could be eaten daily
These foods are high in protein. They can be high in fat, so choose low fat options and cook them without adding too much fat.
Some tips:
• Remove the fat from meat and skin from chicken before cooking. Grill chicken, fish and meat instead of frying
• Choose lower fat milk, yoghurt and cheese
• Boil or poach eggs rather than frying
• Sardines, tuna and salmon provide protein and essential fats.
Eat fats sparingly
Some fats are beneficial fats, like avocados, use them in salads, sandwiches or rolls, olive oil (on salads) and sunflower or canola oil for cooking. Other fats are not as healthy so use them only in small amounts, e.g. margarine, butter, cream, mayonnaise, salad cream and salad dressings.
Use salt sparingly
Avoid cooking with salt. Avoid foods that contain a lot of salt, such as processed meat, packet crisps, packet soups and sauces. Flavour foods naturally with herbs, garlic, chillies, ginger, black pepper and lemon juice.
Drink lots of clean, safe water
Water helps to move food through our bodies and removes waste products from the body.
If you are unsure if your water source is safe, boil it before you drink it. Try to drink mostly water, but you can also include tea, especially rooibos and herbal teas, fruit juice and low fat or skim milk.
If you drink alcohol, drink sensibly
Drinking too much alcohol can damage your liver and lead to some cancers, high blood pressure and high blood fat levels. Women should not have more than one drink per day, and men should not have more than two drinks per day.

Sour Smelling Towels:
Whenever possible, always use bleach when washing towels. If this is not possible, for colored towels, pour a cup of white vinegar or 1/4 cup Febreeze into the washer with the towels and detergent. Never overload the washer with too many towels, or clothes, for that matter, as they will not have room to agitate and clean thoroughly. Never let a washed, wet load of laundry of any kind sit in the washer for long; dry as soon as possible. For a towel you are currently using, hang it in a fashion that will allow it to dry completely between uses; if thrown on the floor in a ball or folded over a towel bar, it can quickly mildew and the smell is hard to get rid of.

Homemade Facial Cleanser
Mix together 2 tablespoons cornstarch, 2 tablespoons glycerin, and 1/2 cup water until smooth. Heat in a small pan placed in a water bath inside another pan. Heat until thick and clear; it will have the consistency of pudding. Do not boil. Cool completely. Use in place of soap to cleanse your skin. (If mixture is too thick, you may thin it by adding a little water, 1 tablespoon at a time, until you reach the desired consistency.)

Microwave Filth
Food splatters all over the inside of your microwave and cooks itself on after time.
To easily remove this mess, place a sponge soaked in water or just a dish filled with 1/2 cup water in the microwave. Cook on high heat for 2 minutes. The filth is now ready to be wiped right off, no scrubbing!

Cooling Cakes:
When baking a cake, do not set on the counter top to cool. All the moisture leaches from the top. Put the finished cake directly into the freezer for at least 2 hours.
Make sure you place a hot pad under the pan to avoid damaging your freezer surface.
You can leave the (covered) cake in the freezer for months, or defrost easily in minutes after the 2 hour cooling down period. You will never have a more moist cake than with this method!

Candle Wax:
To remove candle wax from carpeting or other fabric, first scrape away any excess. Then, place a brown paper bag over the wax and run a warm iron over the bag. The wax will melt right into the bag! Continue moving the bag around as you pick up the wax so you are always using a clean section. If a little grease stain remains on carpet, sprinkle with baking soda and allow to sit overnight before vacuuming, which will remove the grease residue. If colored wax leaves a stain on carpet, blot with spot remover or carpet cleaner, following label directions.

U.S Chamber Releases Study on the
Importance of Broadband to People with Disabilities Offers Guidance to
Policymakers on National Policy
WASHINGTON, D.C.-The U.S. Chamber of Commerce today released a paper on The
Impact of Broadband on People with Disabilities
<https://www.uschamber.com/assets/env/0912broadband_dis.pdf> , as part of
its series of studies detailing the benefits of broadband technology.
The paper also offers guidance to policymakers as they examine broadband
issues, including how to craft a national broadband plan and how to
implement the broadband-related provisions in this year's economic stimulus
bill.
"Broadband enables a range of social, economic, and health-related benefits
to be delivered in an affordable, convenient, and effective manner," said
William L. Kovacs, U.S. Chamber senior vice president for Environment,
Technology, and Regulatory Affairs. "In particular, broadband and
broadband-enabled technologies have the potential to greatly assist people
with disabilities."
Over the past two years, the telecommunications industry has invested over
$120 billion in broadband infrastructure. It will take up to $350 billion to
make broadband universally available in the United States, according to the
Federal Communications Commission's Broadband Task Force. Yet, even where
broadband is available, a large number of people with disabilities remain
offline for a variety of reasons, according to the study. Therefore, in
addition to broadband availability, the paper also examines broadband
awareness and demand, adoption, and use of broadband by people with
disabilities. A broadband connection helps people with disabilities
participate in a wide range of activities and pursuits, including employment
opportunities, health-related research, and community participation.
"The ability to engage in e-commerce, pursue online training, telecommute,
or establish a small business are just some of the ways that broadband
provides economic opportunities for people with disabilities," said Kovacs.
"Additionally, broadband enables life-enhancing telemedicine services like
in-home monitoring and can lower healthcare costs by improving access to
information and reducing travel costs."
The study was authored by Charles M. Davidson and Michael J. Santorelli of
the Advanced Communications Law & Policy Institute at New York Law School.
