This is one of my pet peeves with the sighted world. So many times throughout my life I have found myself being address by others in the third person. They somehow find it necessary or more comfortable to speak to me by talking to the person accompanying me. Sometimes the person accompanying me would politely tell the person asking the question that they should ask me what I need instead of asking them. On other occasions when I am feeling up to it I would also politely say: "You can ask me directly." This is a big problem if I make it a big problem and the solution that I have come up with and the one that works for me is to educate those that I come in contact with.
There is no pattern to the type of person that chooses to address my companion instead of me; sales persons do it, bus drivers do it, doctors do it, so many do it. I would go into a store with my friend and the sales person would ask: "What would she like." I would visit the doctor's office with my mom and the doctor would turn to her and say: "She does not have much of a chance of regaining her vision." Or I would go to the post office to mail letters and the post master would turn to my friend and say: "What does she have in the package? Documents or what?" Or at the restaurant the waiter would ask: "What would she like to order?"
The classic for me is when I am traveling and I get to the counter escorted by an airport attendant and the ticket agent asks the attendant: "Where is she traveling to?" Of course the poor bewildered attendant has no idea where I am traveling to so I have to step in and rescue the situation. Or here is another one for you: I go to the post office on my own with my package to mail and the friendly post mistress asks: "Do you know what you have in the package?" This time she has no choice but to speak directly to me because I am alone.
On most of these occasions I have taught myself to smile and speak up but there are the odd times when I become so frustrated and say in a sarcastic tone: "You can speak to me. I can understand you." As I see it, the only way to reduce these types of incidents is through education and you can help by spreading the word that blind persons can hear and understand. You do not need to ask someone else to interpret for them.

Key Benefits Of Carrots
Carrots have an extremely high beta-carotene content and have many health benefits, including giving protection against coronary heart disease and several cancers, notably lung cancer. Carrots can also lower blood cholesterol and help guard against food poisoning.
Beta-carotene has been associated with an increased risk for lung cancer in smokers.
The three studies that indicated this association did, however, test the association with amounts of beta-carotene that dramatically exceeded the recommended doses.
Normal, dietary beta-carotene intake should be safe, and, in moderate amounts, may protect against cancer. Excessive beta-carotene supplementation could, however, create a problem.
A balanced diet, that includes one portion of carrots, one half cup of grated carrots, per day, should be fine.
How much carrots should you eat?
Carrots are low in calories and can therefore be eaten freely. Even just one carrot a day will increase the beta-carotene levels in the body.
Maximizing the benefits of carrots
The good news is that cooking doesn't seem to diminish this vegetable's benefits:
beta-carotene is not destroyed by the cooking process.
Interestingly, the anti-cancer properties of carrots are enhanced 25 percent if they are cooked whole rather than chopped up beforehand.
And, for the record, fresh carrots are healthier than carrot juice.

Melting Chocolate In The Microwave:
Place chocolate pieces in a bowl. Microwave on high for 1 minute. Stir. Return to microwave if necessary. Heat and stir in 30 second intervals until chocolate reaches smooth, melted consistency. For a smoother melt, add a tablespoon of vegetable oil per pound of chocolate. Never introduce water into the mix; this will seize the chocolate, You cannot recover chocolate once it's been scorched.

Self-Care At Home For Ingrown Toenails
If it is early in the course of the ingrown toenail, then home care may be successful in preventing the need for surgery.
Soak the foot in warm water four times a day. You do not need to add soap, salts, or antibacterial agents to the water.
Wash the foot, including the affected area twice a day with soap and water. Keep the foot clean and dry during the rest of the day.
Do not wear high heels or tight-fitting shoes. Consider wearing sandals, if possible, until the condition clears up.
Try to lift up the corner of the nail that is digging into the skin. Take a small piece of cotton or gauze and roll it between your fingers to form a small roll or wick. Then place the roll between the nail and the skin to keep it elevated. This is painful but is the most important part of home treatment. After every soaking, try to push the roll a little farther in. Change the roll out every day. It may take from seven to 15 days for the nail to grow out so that it does not poke into the skin any longer.

Wax Paper Has Many Uses.
Our mothers probably used miles of it in their kitchens, but today, wax paper seems to have been pushed to the back of the kitchen cabinet.
But when it comes to versatility, wax paper is on a roll. Here are a few ideas.
To keep a bottle of pancake syrup from dripping, rub the rim with a piece of wax paper.
Wax paper can be used to keep wooden salad bowls in good condition. Rub the bowl inside and out with a piece of crumpled wax paper. It will seal in moisture and help prevent strong flavors from permeating the wood. Use the same technique to treat wooden salad utensils.
To help shower curtain rings slide more smoothly, buff the rod with a piece of wax paper. This works on both metal and plastic rods.
Give a crisp finish to ribbon, linen cloths, collars and cuffs by ironing between two sheets of wax paper. Place a sheet of clean paper underneath to protect the ironing board and one on top to protect the iron.
Use wax paper to apply a temporary non-stick coating to your waffle iron.
Heat up the appliance and then turn it off. Lay a double thickness of wax paper on the grid and close the iron. Remove the paper once the waffle iron is cool.
Rub the barrel of a cool curling iron with wax paper to keep it slick and smooth.
To keep foods from getting soggy in the microwave, cover them with wax paper instead of plastic wrap. Because it doesn't cling, wax paper will allow more steam to escape.

Lemons have a very high vitamin C content. Lemons help to lower cholesterol levels and also have anti-cancer effects, because of lemons' limonoid phytochemicals.
How much lemons should you eat?
Lemons are low in calories, but because they are generally quite sour, they tend to be eaten in dressings, sauces or drinks, rather than on their own. A daily portion of citrus fruit is recommended.
Maximizing the benefits of lemons
Limonoids and limonene are found in the whole lemon – pith and peel included. It is therefore best to make use of the whole lemon.

How Do You Tell When A Pineapple Is Ripe And Fresh?
Many of us have experienced the rapidly deteriorating pineapple or the underripe pineapple. If you want to get it right, there are some little tricks guaranteed to help you choose the right pineapple each time.
1. Be alert for two key elements of a ripe pineapple: freshness and deterioration.
You are looking for a fresh pineapple, not a rotting one. The stem is the area of the pineapple that feeds sugar to the fruit. It is from here that the pineapple changes color.
2. If you have some vision, look at the pineapple. It should reflect a golden yellow color. The minimum area for this should be on the eyes at the base of the fruit.
Never purchase a pineapple that is fully green as it will not ripen well. The higher the color rises up the pineapple, the sweeter it will be.
3. Smell the pineapple. If it smells sweet, then it's ready. If it has no scent, it's not ripe. If it smells fermented, it's over ripe!
4. Touch the pineapple gently. It should be firm to a gentle press and only yield slightly.
5. Beware the myth! It is an urban myth that a pineapple is ripe when a leaf can be removed from the crown easily. It is proof of nothing in terms of ripeness.
6. Beware the deteriorating pineapple. A deteriorating pineapple will be a reddish, bronze color or it may even be green. It will smell as if it is fermenting, like vinegar. It will also be mushy when pushed gently and it will likely have wrinkled skin. Other clear indications include mold, oozing sticky juices, cracks in the skin and leaves turning brown and dropping off.
Tips
Pick the pineapple that is the cleanest and brightest. A larger pineapple will obviously yield a greater quantity of fruit, but may also cost more if sold by weight.
Buy the pineapple the same day that you intend to use it; that way, it will be fresh and will not deteriorate further.
Be aware that some pineapples are considered to be ripe when green. This is the claim of those promoting them; you be the judge by testing them when green.
The varieties that claim this include the Central American pineapple and some Hawaiian pineapples.
If you must store the pineapple, do so in the upper part of the refrigerator at a forty-five degree angle. Do not leave it there for more than 2 to 3 days.

Navigating the Dreaded Cafeteria!

Have you ever skipped a meal or eaten something you really didn't like
because it seemed easier and less of a hassle than figuring out how to get
what you really wanted to eat in a cafeteria? Have you skipped lunch with
friends to avoid a cafeteria line? I have.
Cafeterias can be intimidating to anyone. In the old days at least there was
only one line from which to order. Now a cafeteria may have many separate
areas, such as a salad bar, a drink station, a hot line and a fast food
line.
The ideal situation is to take a tour of the cafeteria, either with a staff
member or a mobility teacher, prior to the beginning of school. This will
give you a heads-up on what to expect and it will be much quieter. Find out
where to start and go through all of the areas systematically. Practice
going from the beginning to specific stations--the ones you really like,
like the salad bar. Wonder how it will go when there are hundreds of people
scurrying for food? Don't worry about that yet.
Where to start? Oh yes, the trays, silverware and those much-needed napkins!
Let's talk about how to carry the tray. Practice with it empty first. I like
to carry it with my elbow on my hip and my forearm running underneath the
tray to the outer edge. This provides stability and balance.
Practice carrying a loaded tray. It's easy right? There are several ways to
carry a tray. Of course, if you have your hands free, no cane, dog, phone,
etc., you can use both hands. Some people like to set the tray on their hip,
up against their body, and put their hand on the outside edge with their arm
going over the tray. Try various ways and see what works for you. To avoid
spills, I like to put a lid on my drink cup and set it on the tray next to
my body so I can feel if it tries to slide. That way I know how to correct
the balance of my tray before my drink falls on the floor.
Oh no! How do I know I'm getting chocolate milk? Ask the cafeteria staff if
prepackaged drinks and foods are always put in the same order. If so,
memorize where your favorites are located and grab them yourself. You can
always double-check with a buddy or someone who is grabbing milk when you
are if you are unsure.
To get something to eat, such as the hot special, listen for the person in
front of you to order, then you know the next person the server will address
is you. Ask what is available and tell the server what you would like. You
will notice your food being dished up and when it's ready, put your hand
forward, palm up, so the server can slide the plate into your hand. It's
easier than trying to find it after the server has set it down and moved on
to the next person. As the servers come to recognize you, they'll let you
know the plate is being handed to you.
If you would like a salad, you may need to ask for assistance until you get
an idea of how the salad bar is organized. Generally the salad bar is set up
the same way every day. If you think you can find the ingredients you want
on your salad, go to the bar and load up. When you come across a container
you don't recognize, ask. Please do not expect a fellow customer to fix your
entire salad!
If you pay after you get your food, listen for the cash register and head in
that direction. Be aware that there may be a line and ask where the end of
the line is located. Don't expect people to let you butt in. For assistance
in locating a table, ask the cashier. If you pay before getting your food,
ask someone in line for pointers on locating an empty table. Hopefully,
you'll be eating with friends and they can call your name when you head
toward the lunch area.
You will encounter cafeterias outside of school. If you don't have the
advantage of touring the cafeteria when it is empty and you are alone,
listen for clues. Do you hear the cash register? How about the jingle of
silverware and plates sliding across a countertop? Where are people putting
empty trays and the garbage? If you can pick up on those kinds of clues, it
will help orient you. If there are others standing in line, ask for some
information about the arrangement of the cafeteria. If no one answers, go to
the cashier and ask for assistance. The cashier may be able to find someone
to help if he can't.
Maybe you have found other ways to navigate a cafeteria that work for you,
and that's great! Just don't be the one who says, "I'm not hungry," when
friends want to eat at a cafeteria.

What does blind mean?
I truly believe that most of the sighted world has a fixed notion as to the meaning of the word "blind" and I say this based on a life-long experience plus those of several of my fellow blind and visually impaired friends and acquaintances. In a nutshell: the word "blind" is taken by the majority of society to mean that a person is unable to see anything and in addition many mainstream persons would tell you that they have a very difficult time understanding what blindness really means.
As a kid growing up in a mainstream environment with two sighted parents and two sighted brothers, I never really gave much thought to this topic except to tell you that from the start I always knew that I was blind because I could not see what others saw. I had a bit of vision that enabled me to see things at a very close range but still things were extremely blurry. I was able to see colors, daylight, and I could distinguish light from dark and some objects. Then when I was in my teens I received a cornea transplant and the world really opened up for me. I was still classified as "blind" but now I could see much more. Then five years ago I lost most of it and now I really know what it is to be blind.
To clarify the picture for you: The word "blind" is liberally used to describe a person who has difficulty seeing things. Someone who is unable to drive because they did not pass the eye test. Someone who either uses a cane or a guide dog to move around. Someone who uses specialized glasses to read and write. Someone who can only see light, shadows, but nothing more. Someone who is totally blind, meaning that they are unable to see anything. So you see, there are varying levels or degrees of blindness and there are different terms to describe each common level. You may hear terms like: High partial, high functional vision, low vision, low functional vision, light perception, and totally blind. If this is all confusing to you, then there is the term legally blind.
As for me: I was born with low functional vision, graduated to high functional vision, and now I am back to light perception. All very confusing you say? Then try this on for size! Different countries apply these terms a bit differently and I am going to give you two websites to visit so that you can see for yourself.

Sauté 6 crushed cloves of garlic in 1 teaspoon vegetable oil until golden. Pour in a quart of beef or chicken stock and bring to a boil. Reduce heat and whisk in 2 egg whites. Beat together 2 egg yolks and 2 tablespoons distilled white vinegar; pour this mixture into the soup. Season with salt and pepper and top with croutons, if desired.

Before Winter Storms and Extreme Cold
Add the following supplies to your disaster supplies kit:
Rock salt to melt ice on walkways
Sand to improve traction
Snow shovels and other snow removal equipment.
Prepare your home and family
Prepare for possible isolation in your home by having sufficient heating fuel; regular fuel sources may be cut off. For example, store a good supply of dry, seasoned wood for your fireplace or wood-burning stove.
Winterize your home to extend the life of your fuel supply by insulating walls and attics, caulking and weather-stripping doors and windows, and installing storm windows or covering windows with plastic.
Winterize your house, barn, shed or any other structure that may provide shelter for your family, neighbors, livestock or equipment. Clear rain gutters; repair roof leaks and cut away tree branches that could fall on a house or other structure during a storm.
Insulate pipes with insulation or newspapers and plastic and allow faucets to drip a little during cold weather to avoid freezing.
Keep fire extinguishers on hand, and make sure everyone in your house knows how to use them. House fires pose an additional risk, as more people turn to alternate heating sources without taking the necessary safety precautions.
Learn how to shut off water valves, in case a pipe bursts.
Know ahead of time what you should do to help elderly or disabled friends, neighbors or employees.
Hire a contractor to check the structural ability of the roof to sustain unusually heavy weight from the accumulation of snow - or water, if drains on flat roofs do not work.
Prepare your car
Check or have a mechanic check the following items on your car:
Antifreeze levels - ensure they are sufficient to avoid freezing.
Battery and ignition system - should be in top condition and battery terminals should be clean.
Brakes - check for wear and fluid levels.
Exhaust system - check for leaks and crimped pipes andrepair or replace as necessary. Carbon monoxide is deadly and usually gives no warning.
Fuel and air filters - replace and keep water out of the system by using additives and maintaining a full tank of gas.
Heater and defroster - ensure they work properly.
Lights and flashing hazard lights - check for serviceability.

Tactile sensations can affect how sound is heard, say researchers

Sensations on the skin play a part in how people hear speech, say Canadian
researchers.
A study found that inaudible puffs of air delivered alongside certain sounds
influenced what participants thought they were listening to.
Writing in the journal Nature, the team said the findings showed that audio
and visual clues were not the only important factors in how people hear.
The findings may lead to better aids for the hard of hearing, experts said.
It is already well known that visual cues from a speaker's face can enhance
or interfere with how a person hears what is being said.
If further research can show the same effect is observed when listening to
everyday conversation in the 'real' world, then it could help improve

In the latest study, researchers at the University of British Columbia in
Vancouver wanted to look at whether tactile sensations also affected how
sounds are heard.
They compared sounds which when spoken are accompanied by a small inaudible
breath of air, such as "pa" and "ta" with sounds which do not such as "ba"
and "da".
At the same time, participants were given - or not - a small puff of air to
the back of the hand or the neck.
They found that "ba" and "da", known as unaspirated sounds, were heard as
the aspirated equivalents, "pa" and "ta", when presented alongside the puff
of air.
It suggests that people also use tactile sensory information alongside other
cues to decipher what is being said.
This additional knowledge in how a full picture of sound is built up could
prove useful in the future development of communication aids for the hearing
impaired, the researchers said.
Dr Ralph Holme, director of biomedical research at the deaf and hard of
hearing charity, RNID, said: "It is well known that visual cues, like lip
reading, can really help people listen to speech if they have a hearing
loss.
"However, some consonants such as b and p or t and d have the same lip
pattern.
"The possibility that a small puff of air on the skin could help people
distinguish between these consonants is fascinating.
Early conversations
"If further research can show the same effect is observed when listening to
everyday conversation in the 'real' world, then it could help improve
hearing aids."
Dr Deborah James, lead scientist for child and family at National Biomedical
Research Unit in Hearing, said the sounds associated with "tiny puffs of
air" help young children differentiate between the beginnings and ends of
words.
"We are exploring the earliest development of auditory/visual speech
perception in very young babies with hearing difficulties - perhaps we
should be looking out for how the babies respond to the natural puffs of air
that parents produce when they get up close to their baby during their
earliest conversations."

I am more exposed to identity theft
You got it and I am making this observation because as a blind person I can see where this particular group of persons is probably the most vulnerable when it comes to identity theft. True it is that seniors and persons with other types of disabilities run a very close second, but please allow me to explain a bit further.
As a person with precious little vision, I have to depend on my sighted family and friends to help me navigate through the mounds of paper generated forms and when it comes to filling out those cumbersome online forms that's a whole new ball game. I am going to tell you exactly how I feel. Helpless, vulnerable, scared, and who is really listening or really cares?
Each time I need to complete hard copy forms, it means that I have no choice but to share personal and confidential information with someone else and it means that I have to trust that person to keep my information private and confidential. I have to trust that the information I give is what is going to be written down exactly as I wish it to be and that the person completing information on my behalf will not copy that information on a separate piece of paper for their later use. In addition, I have to trust that the person reading the information to me is reading exactly what is there and not reading something else that they may choose to make up.
When it comes to completing those cumbersome and complicated online forms, I have to depend on either my screen reader software to tell me exactly what is being required or if that is not possible, I have to depend on sighted assistance. At the present time, screen reader software still faces many challenges when it comes to being able to decipher the contents of forms and why is this? Because many website developers do not take the time to ensure that the forms have been designed to be accessible and usable. Just think of it in this way: If sighted persons have difficulty completing forms online then the challenge for someone who is blind or visually impaired becomes twice or thrice as difficult.
So, the picture is this: If I am unable to complete forms on my own then I need to depend on a person with sight to help me and then I have to place complete trust in that person to read accurately to me and write accurately for me. This puts me in a very vulnerable position and opens me up to identity theft. There is a growing demand for forms to be provided in alternate formats and what this means is this: Forms need to be provided in a format whereby blind and visually impaired persons will be able to read and complete their own forms independently. If you would like to learn more about the meaning of alternate formats then you can visit www.tbase.com. This Canadian-based company provides alternate formats to those who are print-disabled which includes blind and visually impaired persons.
