Today, I am pleased to introduce our resident editorialist Donna J. Jodhan and she is going to tell you a bit about how she views the world as a blind person. Here now is Donna.
I wish you a pleasant day.
How big is my world?
In the normal scheme of things, my world should be as big as I want it to be but in today's society it is very difficult for me to define the size of my world. You see, my world is not really in my hands. For the most part and sadly so, my world remains in the hands of society and I can tell you that there are days where I wish I could change this; but I can't. Sad but true.
One of my favorite quotations is by Robert F. Kennedy: "Some men see things as they are and say why! I dream things that never were and say why not!" And this is the philosophy that I use every day of my life in order to define my world in my own way.
You may be wondering why I would say that my world is not in my hands but rather in the hands of society and I'll tell you why.
Society has inadvertently and continues to erect countless barriers for me and for others who are blind and visually impaired. They have erected daunting barriers for millions of persons with disabilities and have even gone the extra mile to do the same for seniors. In the case of persons with disabilities, and in particular persons who are blind and visually impaired, one of the most challenging barriers that I and my cofrères face is a barrier called Attitude.
This barrier is nothing new and has been around for too long and if I and my cofrères do not take steps to bring it down, then I am afraid that we will find ourselves inadvertently short changing tomorrow's generation of disabled kids of a better future. In short, if we do not start to pro-act in stead of react, we will be robbing our disabled kids of their rights to a future that ought to include them as contributing members to society.
All my life I have had to battle attitude barriers from society. As early as I can remember: My parents had to battle the system to allow me to obtain my formal education. Then as a university student I had to endure constant remarks from those professors who made no effort to hide their discontent about having a blind student in their class. In the workplace I and others have had to deal with the narrow mindedness of managers and co-workers alike who do not believe that blind and visually impaired persons can be productive and this is why I am so glad that I can now use the Internet as my workplace. Most of my clients are blissfully unaware that I am blind and frankly, they would probably not care as long as I was able to perform to their satisfaction.
I am not content to sit back and wait for things to happen and this is why I have managed to expand my world much more than many others like me. I challenged an ice skating school to teach me to ice skate. I have learned to play chess. I have written two books. I have hang glided, sailed, and even driven around in a parking lot. No, I am not showing off! Just trying to motivate others to expand their world. Nothing is impossible if you put your mind to it but to be possible one has to be realistic.
The attitude barrier needs to be addressed and if I want to be charitable which I am, I can say that 99.9% of the time, this barrier is erected by those who are limited by such things as: Cultural beliefs, fear of the unknown, fear of interacting with those who are different, and an unwillingness to learn new things and meet new people. I am going to give you two websites that you can visit in order to learn more about the world of blind and visually impaired persons.

Washing Stuffed Animals
Does your child's favorite stuffed fuzzy need a bath? Slip small stuffed animals into a sock and tie the end to prevent buttons, eyes, and other decorative items from coming loose.

Diana's Delicious Dishes:
Skillet Chops With Mushroom Gravy
1/2 cup dry bread crumbs
2 tablespoons grated Parmesan cheese
4 pork chops
1 tablespoon vegetable oil
1 (10.5 ounce) can cream of mushroom soup
1/2 cup milk
In large resealable plastic bag, combine bread crumbs and Parmesan cheese. Add chops, two at a time, and shake to coat. In skillet, heat oil over medium-high heat. Cook chops until brown on both sides. Remove chops from skillet. Reduce heat to medium. Blend soup and milk in the skillet, stirring to scrape up the bits of breading left over from the chops. You can adjust the amount of milk depending on how thick you want the gravy to be, it will thin a bit during the cooking process. Bring to a gentle boil, increasing heat slightly if necessary. When soup mixture is bubbling, return chops to skillet. Cover, and reduce heat to low. Simmer for 20 minutes, or until chops are cooked through.
Makes 4 servings.

Excess Grease
Excess grease/fat can be removed from casseroles/stews etc., but dropping in an ice cube, the fat will stick to the cube and can be removed. Alternatively, a slice of fresh white bread placed carefully on the surface will absorb most of the unwanted grease.

Fade Tea Stains On Clothes
Dilute lemon juice with an equal amount of water. Use an eyedropper or a Q-tip to make sure the juice targets the stain. Then thoroughly flush with cool water.

Disinfect Small Cuts In A Pinch
After you wash and dry the cut area, apply a thin coat of honey and cover with a bandage. Propolis, an antibacterial compound found in honey, kills germs to reduce the risk of infection. Plus, because the sweetener is a humectant, it will retain water molecules to keep the skin moist and inhibit scarring...

Base Meals On Planned Leftovers
Consider doubling basic recipes in order to use the remainder in a new way the next night. For example, black beans can be used in burritos tonight and then pureed into a delicious soup tomorrow. Roast chicken or turkey one night can furnish the basis of a salad, soup or casserole the next day.
Buy and cook in quantity and freeze the extras. This can save you money now, by using foods bought at a good price, and save you time later, which really has a monetary value too!

Keeping Bananas Fresh
Separate the bananas(with no dark bruised skin) and wrap each in foil. Store in the crisper of your refrigerator. the skins will darken but the banana will be firm and fresh up to 8 to 10 days.
Tender Meat Every Time
Stir 1 teaspoon of cornstarch into your favorite marinade before adding the meat. Cornstarch helps the marinade cling to the meat, creating a protective layer that slows the rapid rise in internal temperature that causes dryness.

Perfect Pasta Pointers:
* In a large pot, heat 4 to 6 quarts of water to boiling for one pound of dry pasta. (You can adjust this amount depending on how much pasta you are cooking.) Add salt, if desired, allowing 1 tablespoon of salt for every pound of pasta.
* When the water reaches a hard, rolling boil, add the pasta gradually, stirring at the same time. Allow the water to return to a boil. Salt added to water is an optional ingredient, a matter of taste, not proper cooking.
* Stir the pasta occasionally during cooking, to prevent sticking. Do not cover. Follow the package directions for cooking times. Each manufacturer has tested their brands and shapes for the best cooking times. If the pasta is to be used as part of a dish that requires further cooking, slightly undercook the pasta.
* Use a long-handled fork or spoon to taste for doneness.
Perfectly cooked pasta is "al dente," or firm to the bite, yet cooked through.
* Drain pasta in a sturdy colander and toss immediately with sauce. Do not rinse unless the recipe says to do so.

Web sight: A New Window to the World

Through his tapering school years, Moiz Tundawala studied via his brother.
The brother would read out texts to him as Moiz-who started to show signs of
Retinitis Pigmentosa in his teens and whose sight gradually declined-would
commit the lessons to memory. Then Moiz decided to study law, and he had to
look for another oral tradition.
In 2004, he found JAWS (Job Access With Speech), a text-to-speech software
that could read out pages of digital text. But scanning a half-ton textbook
requires the patience of Job.
"There are limited institutionalised arrangements for the access of study
material for the visually impaired," complains Moiz. "While NAB (National
Association for the Blind) does a good job producing basic level texts and
popular literature in Braille and audio books, it falls short when it comes
to advanced academic material."
The problem of restricted access to reading material for the visually and
print-impaired choruses across the developing world. The cataracts of the
Indian government have denied this significant population-the 2001 census
counted 13 million visually impaired (VI) people-the fundamental right to
read. According to NAB, only 30 per cent of the VI go all the way to
Standard X.
But corrective efforts are under way. Moiz recently stumbled upon an online
social network and content-sharing platform called Bookbole-floated by an
Indian social enterprise called Inclusive Planet in collaboration with the
Bangalore-based Centre for Internet and Society (CIS). Bookbole is a clean
site designed expressly for the VI, with Accessibility for iPhone and iPod
touch-a blind user's review-topping its `most viewed' list.
The site aims to connect visually and print-impaired (including dyslexic)
people around the world and gets them to share their digital archives of
class notes, blogs, recipes, articles, audio magazines, theses, sound
recordings and e-books. "In three months, Bookbole has managed a
10,000-strong archive with a global member base of 1,000," says Bookbole's
active ally Soner Coban, a blind English Literature graduate from Bosphorus
University in Turkey. "In other systems, you have to wait for the
administrator to upload books, but BB users can upload what they want and
request for what they'd like."
"We are trying to connect isolated users and their libraries and enable them
to solve one another's problems," says Rahul Cherian from Chennai, one of
the three co-founders of Inclusive Planet.
"A visually impaired person would have accumulated about 30-40 GB of reading
material over time through his own efforts," Cherian says. "By providing a
platform for sharing some of this material we're trying to minimise the
duplication of effort." Says Reuben Jacob, co-founder and IT brain of the
project, "Not all electronic files are readable by text to speech software.
But we've made sure that the semantics of the shared documents on this site
are compatible with screen-reading software."
NAB has a Talking Books library with 5,000 titles on cassettes and CDs. The
VI have to either borrow from the NAB centre itself or request a posted
copy. Raman Shankar, project head of Talking Books, says that publishers
permit the conversion of their books to audio format on condition that they
are only circulated to the blind. While Bookbole currently stipulates that
only VI persons join the club and requires new users to indicate this, it
doesn't ask for a sight certificate. "Being global is essential to the way
Bookbole works," insists Sachin Malhan, one of the co-founders of Inclusive
Planet. "If we can't connect similarly placed visually impaired in different
parts of the world, then the value won't be created." It is unfeasible and
impractical to create a body to screen the users across the world.
Instead,if they receive a copyright-related complaint about a certain file
or of misuse of the site, they will remove the content.
Currently the situation is that an overwhelming majority of publishers don't
make books available for the visually and print-impaired, and for the
low-earning VI in India audio books are prohibitively priced as it is. So
they have little recourse other than to scan or search for e-books on the
internet, a move that automatically makes them culpable by myopic copyright
laws.
This is why Inclusive Planet, along with non-profits like the CIS, The Daisy
Forum of India and EnAble India, has also launched the Indian chapter of the
World Blind Union's Right to Read campaign. It has been pushing for a
greater availability of books in accessible formats and an amendment of
copyright laws.
"We will present a white paper to the HRD ministry at the end of our
six-city Right to Read tour," says Cherian.

Why I touch light bulbs
As a rule of thumb, the mainstream person with enough vision can usually tell when a light bulb has had it and they can usually do this after turning on the light switch and noticing that the bulb is not lighting. For me, it is very different. When I had enough vision it was no problem for me to tell whether or not a light bulb was lighting but ever since losing my vision over five years ago, it is a different story.
I now have to use a different method to tell me if the good old light bulb is lighting up. Often times if a light bulb is ready to quit lighting, you would usually hear a "pop" sound when you turn on the switch but you can't always depend on this indicator. So, I have to use another technique. Yes, you got it! I have to touch the light bulb to see what's going on or if the light bulb is close enough to me, I can just bring my hand close enough to feel if there is any heat coming from it.
The other day, I went to turn on a switch in my office and as I did so I heard something go "pop" and I immediately realized that one of the light bulbs had blown; but which one of the two was it? I took my step ladder and climbed towards the light bulbs. First I had to locate them by feeling along the ceiling for the chandelier. Next I had to stretch all the way to see which one was hot and which was cold. After a minute or so I found the culprit and then I had to climb back down, turn off the switch, and then climb back up and repeat the process of finding the chandelier. Upon locating the blown light bulb, the cold one, I removed it and then returned with a new light bulb but wait! There was more to come.
After screwing in the new light bulb, I climbed back down, switched on the light, and returned to make sure that the new light bulb was lighting. I tested both light bulbs with my hand and lo and behold! The new light bulb was not lighting. It was cold! So down I went to repeat the process all over again. After a few minutes, I had things working again.
Last year, I discovered a little gadget that I can use to tell if lights are on in a room. If you turn it on and it buzzes, then there is light but if it does not buzz then there is no light. A very handy little thing for telling if my computer screen is on or off but be careful now! It will only work if there is no residual light close at hand. For example, daylight. I will hasten to add that I could not have used it in the incident described above because there were two light bulbs for me to deal with.
You may be asking yourself if I am unable to see the light, then why do I bother to turn on lights? Very simple! So that the rest of the world could see what's going on.

YV Contact Lens That Darkens Automatically Under Sunlight
While glasses that turn a shade darker under bright sunlight have been around for forty years, only recently has someone developed a pair of contact lens that does the same.
Even better, through the use of some nifty nano-engineering, these photochromic (that's the scientific term folks) lens perform even better than their traditional, frame-rimmed counterparts. According to the director of the Singaporean institute responsible for this development, the contact lens adapt faster, thanks to the use of a network of really tiny tunnels distributed evenly throughout the lens.
These tunnels contain the dye that automatically adjusts to the sunlight; the structure itself allows more of this dye to exist in the same area, granting the sensitivity and speed benefits noted above.
No word yet on market availability or price.

Here is a very informative article regarding the difference between spyware, viruses, malware, adware and grayware from Fred's Head. I am sure I am not the only one who has went to the local Wal-mart or other store to buy an anti-virus software only to find endless shelves of many types and none really taking care of everything. It is really too bad the everyday computer who just wants to keep in touch with family members etc has to worry about someone getting accesss to personal information or making the computer useless.
the difference between spyware, viruses, malware, adware and grayware?
We hear these names all the time on the internet and in our email but what are they?
What do they do? Let's see if we can define these names and tell you a little more about each one.
Let's start with malware. Malware is a general term referring to all of the nasties that can infect your computer, from viruses to spyware! The term malware is actually short for "malicious software" that's not surprising, considering what it can do to your computer!
Next up is one of the most well-known types of malware: computer viruses! In case you didn't know, the first computer virus was Bob Thomas's Creeper, created way back in 1971 on the US Department of Defense's ARPANET, the predecessor of the Internet.
Out of that was born the first piece of anti-virus software, the Reaper.
So, what is a computer virus? Strictly speaking, a computer virus is just a self-replicating computer program. It doesn't have to be destructive, although many are. In fact, early viruses were often harmless and simply displayed a funny message or poem. Usually, computer viruses find their way into your computer by piggybacking on a legitimate program, for example, one that you might download from the Internet.
Anti-virus programs such as Norton or McAfee will pick up most viruses, but you should always be careful when downloading files from the Internet. Some might spell doom for your computer system!
Unlike viruses, spyware usually doesn't self-replicate, but it can be equally or even more harmful to you and your computer. Although spyware might not disrupt your use of your computer, it might collect information about your usage which might be considered an invasion of privacy. One example of software which could be considered spyware is a key logging program. Key loggers record what you type and allow the installer of the program to effectively monitor your computer usage. Spyware can also have some financial implications: for example, if you access online banking with a spyware-infected computer you could have your details stolen!
Adware is a type of software that might not be considered to be malware, depending on your point of view. The difference between adware and other malware is that in many cases the user actually consents to having the adware installed on their computer.
In most cases, adware is installed in conjunction with free software or as a seemingly useful browser add-on (like a toolbar). Once it's found its way into your computer system, it hits you with a barrage of advertisements; from pop-ups to banner ads!
Because adware is often installed with the user's consent, it is often not classified as malware by antivirus programs and often a separate adware removal program will be needed.
Grayware is a very broad term for all of those computer nasties that are annoying but not necessarily totally destructive, including adware, joke programs and dialers.
Unfortunately, your antivirus program might not remove grayware (in fact, one antivirus program maker was sued by a grayware creator for blocking the installation of their program!) so you'll need to install other programs to get rid of it. You should make sure that you check reviews of your chosen product as some 'grayware removers' are viruses in themselves!

Storing Recipes On The Computer
A few weeks ago someone emailed in asking if I knew any recipe programs.
I must apologize for the delay for getting back to the topic, but I've been doing some research among several avid every day chefs. I was also looking for the most accessible means of storing recipes among computers using adaptive software such as screenreaders and/or screen enlargement.
Instead of telling all the things that didn't work, here are the methods being used by around 50 "normally" sighted and those using adaptive screen access software.
METHOD 1. Create a file for each category such as Appetizers,, casseroles, main dishes etc.
Add to the file by moving to the bottom and pressing enter a few times. Then enter in your new recipe.
Then when you are looking for an idea for example in the Appetizers, file, use your word processor's find/replace feature to search for a given recipe title or some ingredient. You would need to use the "next instance" option in your word processor's find/replace repeatedly until locating your choice.
Here is an example of how to search using Microsoft Word 2003 or 2007. I am inserting two recipes from a cookbook I have below It is a small part of a file called " Appetizers, Relishes And Pickles.".
I will include the instructions of how to search for recipe's title first and then for an ingredient second. The two recipes are at the end of this document.

Disk Cleanup
Feel like giving your computer some elbow room to get work done a little faster?
Don't want to remove any programs or files to do it?
Similar to the Scan Disk tool, Disk Cleanup is the Windows XP tool to speed up your computer by removing temporary files that might be cluttering up your disk space.
Unlike Scan Disk, Disk Cleanup doesn't require rebooting your computer, and it gives you more control over what it throws away.
Before running Disk Cleanup, or defragmenterb close all your running programs to speed up the process.
From the Start menu, choose All Programs, then Accessories, then System Tools, and (finally!) Disk Cleanup. Select the drive you want to clean, which is usually the C: drive. For a few moments or minutes, Disk Cleanup will survey the mess with its hands on its hips, shaking its head. Sorry, I couldn't help sharing my mental image.
I mean to say, Disk Cleanup will assess your disk for a short time and open a window that tells you how much space you can make available by deleting different files.
In order to uncheck or check a box, press the spacebar or click on it.I recommend you to uncheck Downloaded Program Files. This folder can contain useful add-ins that you might miss in multiple programs. "Setup Log Files" is also best left undeleted in most cases.
If you scroll, or arrow down within the same window, you'll see Temporary Files.
Sometimes ScanDisk will incorrectly show that deleting "Temporary Files" will gain you zero Kb because it only counts files that are less than one to two weeks old.
Leave "Catalog Files for the Content Indexer" unchecked.
A second tab sheet is available by pressing control plus tab or pressing shift plus tab and then arrowing to the right.
Under the "More Options" tab, you'll see three options with "Clean Up" buttons. Look at the third one. If your system regularly saves System Restore Points, you can delete all but the most recent restore point to reclaim some more space. Press the spacebar or Click that "Clean Up" button, then OK.
If you are not sure, just leave it alone.
Once ready to complete the disc clean up, tab to okay and press the spacebar or click OK.
You will be asked if you are sure you wish to complete this task.
Press the letter y for yes or N for no.
suspect after coming this far, pressing y for yes is what you will do.
When all is finished, disk cleanup closes.
When you're done, you might want to defragment your cleaned-up disk to make the most of your new space.
1. Press the start button.
2. Move to all programs or programs depending on how your screen is set up, classic or xp view.
3. Move to accessories and arrow once to the right.
4. Move to system tools and arrow once to the right.
5. Press the letter d until reaching disc defragmenter and press enter or click on the option.
6. Tab once to analyze and press the spacebar or click on it.
7. You will be told if the computer needs defragmented in a few seconds.
8. If it is recommended to defragment, Tab to the defragment button and press the spacebar or click on it.
9. Depending on how much defragment is needed, this may take a while.
One of my computers took 45 minutes and one took ten.
10. When finished defragmenting, a screen appears with the options to view report or close.
11. If you are finished, tab to close and press enter.
12. Press alt plus f4 to close the defragmenter.
13. Now I would suggest running your anti-virus software.

Vatican post office issues stamps with raised dots to honour inventor of
Braille system

VATICAN CITY - The Vatican post office says it has issued its first Braille
stamps to commemorate the 200th anniversary of the birth of Louis Braille,
the French creator of the writing and reading system for the blind.
The stamps feature a portrait of Braille and his system's raised dots that
spell out Braille, Vatican City State and the price.
The stamps issued Wednesday have a value of C0.65 (US$0.96).
The Vatican said it will print 300,000 stamps, which will go on sale at its
post offices near St. Peter's Basilica.
Braille was born in France in 1809 and lost his sight at an early age. He
then developed a reading and writing system based on patterns of raised dots
that allow blind people to recognize the alphabet with the tips of their
fingers.

Greetings everyone! I'm Jayna Sheffield, your friendly Café friend and it's time for our weekly editorial by Donna J. Jodhan. She has written them under pen names and in addition, she is a very successful entrepreneur and advocate. Here now is her editorial of the week.
Please don't shout at me!
Some times I get so tired of people shouting at me! No, not because I did something wrong or inappropriate! No, not because they were frustrated with me! No, not because I was not listening to them! None of the above!
They keep shouting at me because they feel that I am unable to hear. For some strange reason, much of the rest of the world has this odd notion that persons who are blind or visually impaired are also deaf or hard of hearing and it is not just one type of person, a particular race or culture, or a particular profession of person. I and many of my blind and visually impaired friends can tell you that at the supermarket they do it. At the pharmacy, in the doctor's office, at the bank, on the sidewalk, or lining up to wait for a vacant bathroom. So many times I have come home with my ear drums practically hanging out of my ears because someone shouted at me in their attempt to have a normal conversation with me.
I have had days of returning home with ringing ears after someone shouted at the top of their voice at me while I was walking on the sidewalk. They did so because they were trying to give me directions. Or I have had to endure headaches after someone tried to help me out at the supermarket. I have also had to deal with roaring frustration on several occasions after someone shouted at me while answering my question. The thing to remember is this: Blind and visually impaired persons are afflicted with the inability to see. However, they can hear; they are not deaf. There is absolutely no reason for you to shout at them in order to be heard. Just speak to them in a normal tone. The same tone that you would use for anyone else except for someone who is hard of hearing.
